Taco Dip
Makes over 3 cups of dip. Recipe easily divides in half. Use low or fat-free
cheeses for a healthier dip. Perfect to serve at a tailgate or football party.
2 cups sour cream (16 oz.)
1 envelope (1.25 oz.) taco seasoning mix
8 oz. cream cheese, softened
2 cups cheddar cheese, grated
Mix sour cream with taco seasoning mix, using a wire whisk. Beat in cream cheese
to blend. (You may need a hand-mixer for this chore.) Stir in grated cheddar
cheese. Leave in refrigerator for 4 hours (or overnight) for seasonings to
blend. Let soften about one hour at room temperature before serving. Serve with
tortilla chips.
