Hungarian Goulash

Easy and fancy enough for company. Toss the buttered noodles with a few poppy seeds for a pretty presentation.

2 Tablespoons flour
½ teaspoon salt
¼ teaspoon black pepper (or to taste)
¼ teaspoon dried thyme leaves
1 lb. top round steak or stew meat, cut into thin bite-sized slices
1 large yellow onion, sliced into thin rings
1 large red bell pepper, sliced into thin rings
2 cloves garlic, minced
1 cup beef broth or water (I use beef broth)
6 oz. can tomato paste
14 oz. can diced tomatoes in juice
1 Tablespoon paprika

Serve with:
Sour Cream
Hot buttered noodles – wide egg noodles are nice

Mix the flour, salt, pepper and thyme in a plastic bag. Add the sliced beef and shake the bag to coat the beef. Place in crockpot with onion, red pepper and garlic.

In a small bowl, stir together the broth, tomato paste, diced tomatoes and paprika. Pour mixture into the crockpot. Gently stir. Cook on LOW for 8 hours.

Serve over hot buttered noodles, garnish with a large dollop of sour cream.
