Salsa Chicken
Salsa Chicken - ready for the oven

This recipe is so easy, it shouldn't even be called a recipe. Grab a few items from the supermarket, toss them together and bake for a delicious dinner that uses only one baking dish!

1 green bell pepper, seeded and cut into thin strips
1 pound boneless, skinless, chicken breasts (2 pieces)
16 oz carton deli salsa (hot, medium, or mild, your choice)
1 jalapeno pepper, seeded and sliced (optional)
Salt, to taste, optional

Steamed rice as accompaniment, optional

Sprinkle the green pepper slices evenly over the bottom of a covered casserole dish. Lay the chicken pieces on top of the peppers and pour the salsa over all. If desired, distribute jalapeno slices over the chicken. Salt to taste, if desired. Cover and bake at 375° for about 30 minutes, then remove the lid and let bake for an additional 10 minutes.

To serve: lift a chicken breast onto a plate and spoon the sauce over. If desired, this dish may be served over a bed of steamed rice.
