Tequila Lime Chicken
Garnish the cooked chicken with fresh cilantro, if
desired.
Juice of four limes
1/3 cup tequila
1/3 cup olive oil
2 teaspoons dried cilantro
1 teaspoon salt
2 cloves chopped garlic
4 boneless, skinless chicken breasts (or substitute)
Place lime juice, tequila, olive oil, cilantro, salt and
garlic in a ziplock bag. Place chicken in bag, shake to
coat and let marinate for several hours. Grill over hot
coals until just cooked through.
