The Perfect Steak

A perfect rib eye steak
There are three
common ways to marinate or spice a steak before grilling - a saucy marinade, a
dry spice rub or a wet rub. A wet rub, or a paste, is similar to a dry rub, but
a little liquid is added to make a paste - in this case, olive oil. Here is a
paste that will get rave reviews from your family and guests. This recipe makes
enough paste for two large steaks - adjust the amounts according to your needs.
This is the perfect time to use the
frozen garlic cubes from Dorot. Of course, this rub would also be great on
chicken.
Two steaks - boneless rib eye, New York or similar
Wet Rub:
2 cloves garlic, mashed
1 teaspoon kosher salt
1 teaspoon coarse ground cracked black pepper
1 teaspoon dried thyme
1 Tablespoon good quality Olive Oil
Mash the wet rub ingredients together in a small bowl with a fork until
well-incorporated and smooth. Place one quarter of the rub on one side of each
steak and smear to coat the steaks with the back of a spoon. Turn steaks over
and repeat. Leave steaks to warm a bit towards room temperature. Grill to your
liking.
