Banana Nut Muffins
This
is very basic recipe – a good formula for any fruit
muffin. This recipe will make 6 jumbo or 12
regular-sized muffins.
2 really ripe bananas, mashed
¼ cup vegetable oil
½ cup apple juice or orange juice
2 eggs
2 cups all-purpose or pastry flour
1 Tablespoon baking powder
1 cup sugar
1 cup chopped walnuts or pecans
Heat oven to 350°. Line a muffin tin with paper liners.
In a bowl, mash the bananas well with a fork or potato
masher. Whisk in the oil, juice and eggs. Sift in the
flour, baking powder and sugar. Stir enough to just
moisten. Add the nuts and stir until just combined.
Spoon batter into prepared muffin tins, filling to about
¼-inch from the top of the paper. Bake for 20 minutes
for regular sized muffins (or 27-30 minutes for jumbo
sized), or until golden brown. Remove from oven; cool on
wire rack.
Makes 12 regular-sized muffins, or 6 jumbo muffins.
