Pumpkin Bread
This
is a favorite at our house. Another recipe from my
Mother-in-Law. The chocolate chips may sound strange,
but the mini-chips are the best surprise.
Mix together with electric mixer:
½ cup canola (or vegetable) oil
2 eggs
1 cup pumpkin puree (canned is easiest!)
½ cup water
Sift together, and add to above mixture:
1 ½ cups sugar
1 teaspoon baking soda
¼ teaspoon baking powder
1 3/4 cups flour
½ teaspoon cinnamon
¼ teaspoon nutmeg
¼ teaspoon ground cloves
¼ teaspoon salt
Add any or all or neither of the following:
½ cup chopped nuts
6 oz. miniature chocolate chips
Bake in an oiled loaf pan 90 minutes at 350°. Cool one
hour before removing from pan. Slice and serve.
Makes one loaf.
