Texas Corn Bread
Another great recipe from my Mother-in-Law. This is perfect with our
RV Chili.
1 cup yellow cornmeal
1 Tablespoon baking powder
1 teaspoon salt
1 cup shredded cheddar cheese
2 eggs
½ cup vegetable oil
1 cup sour cream
1 – 8 oz. can cream-style corn
1 – 4 oz. can chopped green chilies
Preheat oven to 400º. Oil a 12-cup bundt pan. In large bowl combine corn meal,
baking powder, salt and cheese. In another bowl mix eggs, oil, sour cream, corn
and chilies until well combined. Add wet ingredients to dry ingredients and stir
just until moistened. Spoon into prepared pan.
Bake for 40-50 minutes or until toothpick inserted in center comes out clean.
Let stand 10 minutes before removing from pan.
Serves 12.
