Caesar Salad
This
recipe is cheating. Traditionally, Caesar Salad is
supposed to be made with a raw egg, but we aren’t
supposed to eat raw eggs anymore. Many people do not
enjoy anchovies either, but if you leave out the egg and
the anchovy, it is just a salad. Use any extra anchovies
from the tin as garnish on top of the salad. The
dressing can be made earlier in the day – toss the
lettuce with the dressing just before serving.
DRESSING:
1 clove garlic, minced very fine
¼ cup extra virgin olive oil
2 Tablespoons fresh lemon juice
¼ teaspoon coarse grind pepper, or to taste
1 Tablespoon minced anchovy fillets
SALAD:
1 head Romaine lettuce, torn
¼ cup freshly shredded Parmesan cheese
Croutons
Whisk the dressing ingredients together (or use a
blender if you choose). Place lettuce, cheese and
croutons in large salad bowl. Pour dressing over and
toss to coat. Serve immediately.
